Making Cracked Wheat Bread

Buy cracked wheat under the name of __________.

Bring 2 cups of water to a boil and add 1 cup cracked wheat and 1 teaspoon of salt. Stir until thick. Put in double boiler and let cook 30 minutes. (This is to soften the grains; otherwise they will be too rough).

In a 1⁄2 measuring cup, which has been greased with 1/3 cup oil so that the syrup runs out easy, pour Steens Sugar Cane Syrup plus some black strap molasses, which is very nutritious but strong-tasting, use at least 1 tablespoon full. Pour the 1/3 cup oil into 2 cups of water and the syrup and bring to 130i. Watch carefully. Don’t get any hotter.

Have 3 cups of whole wheat flour (way to measure: fill cups by way of taking with spoon and sifting the flour into the cup and smooth it off by a knife. This puts air into the flour so it isn’t packed down and making more flour than you need.

In the mixing machine, add the water, oil and syrup liquid. Mix for 10 minutes. This makes gluten.

Next gradually add by machine or hands the cooked cracked wheat which has cooled to 130i.

Next add whole wheat flour to make dough so you can handle it. Option: first add wheat germ and soy flour to make 1⁄2 cup. This gives added nutrition.

Sift flour over pastry cloth and dump the dough onto it and knead and put in greased tall pan. Let rise in warm place (water heater) for 45 minutes until it doubles in size.

Pour out onto cloth and cut in 3 parts and form into loaves and put in greased loaf pans and cook for 40 minutes at 375i. Dump out on rack.

All these years since I married Carl and had 3 children, I have made cakes. I used to make pies but they are a “no no” since the pie crust has so much lard or shortening. I can make a cake quickly since I know all my recipes by heart. So as the family increased, I became the cake maker, especially the birthday cake maker. A celebration usually ensued at the home of the celebrant or celebration and if the family happened to be in a good family mood, they invited the rest of the family. As the years passed, all family members did not invite all others to their birthdays.

Sim liked nuts on his chocolate cake (pecans). Timothy’s birthday called for lemon layer cake. Justin’s birthday called for chocolate cake. Elaine’s birthday called for chocolate cake with burnt sugar icing.Frank’s birthday called for a kind his mother made. Carol’s birthday called for chocolate cake.

My birthday in late years became a party at the Houston Country Club, hosted by my two daughters Elaine and Carol, and most of the time lately we had no cake–too fattening.

My favorite is burnt-sugar (caramel).
